In addition to its vitamin content, broccoli boasts at least four kinds of phytochemicals, cancer fighters in food that are neither vitamins nor minerals. With names like sulforaphane, phenethyl isothiocyanate, monoterpene, and indole, you might not believe that these are natural ingredients. But in fact, these tongue-twisting, health-enhancing compounds are abundant in nature.

Here are some tips on how you can get more broccoli in your meals every day. These recommendations come from Linda Nebeling, R.D., Ph.D., a nutritionist for the Five a Day for Better Health program at the National Cancer Institute in Bethesda, Maryland.

Eat 'em raw. Raw or lightly steamed broccoli has a hearty, satisfying crunch. When dunked into a low-fat dip, this veggie makes a great alternative to chips. So, next time you want to settle down with a bowl of something crispy, go for the green.

Don't forget about soup. Broccoli doesn't have to be relegated to the corner of your dinner plate. Bring it to center stage by letting it star in a pot of soup. Cream of broccoli soup is a whole different way to capitalize on this vegetable. Substitute evaporated skim milk for heavy cream and use a blender to puree cooked broccoli until it's smooth.

Pick some florets. If preparing broccoli seems like a chore, check out the packages of already-trimmed broccoli at your grocery store. Florets, the top part of the vegetable with the thick stems already removed, are just right for steaming or sautéing. They may cost a bit more, but you will be more likely to eat them. "Having pre-cut vegetables available is helping a lot of people to eat healthier," says Margaret Barth, R.D., Ph.D., associate professor of nutrition and food science at the University of Kentucky in Lexington. "These products make a big difference to working moms and other busy people."

Antibacterial activity of broccoli compounds:

The woody stalk (base of the plant) and also the flowering portion of the plant (broccoli) contains antibacterial compounds.

Broccoli showed potent antibacterial activity and we isolated the active compounds. Instrumental analysis identified the compounds as isothiocyanate's. Some homologues of isothiocyanate's were also active against Escherichia coli, Staphylococcus aureus and Chlamydia.

The antimicrobial potential of seven compounds isolated from broccoli was tested against the growth of Klebsiella pneumoniae, Aspergillus flavus, Bacillus cereus. The well known, syringic acid (0.5 mg/ml) completely inhibited the growth of Bacillus cereus. p-hydroxy benzoic and p-coumaric acid (0.3 mg/ml) completely inhibited the growth E.coli and Klebsiella pneumoniae.

Hot Potato and Broccoli Salad

(serves 6)

160 calories per serving
10 grams of fat

4 medium potatoes, peeled
1 bunch broccoli, trimmed and broken into small florets
1/4 cup vegetable or salad oil
1/4 cup lemon juice
1/4 teaspoon garlic powder
3/4 teaspoon salt
1 teaspoon basil
1/4 teaspoon liquid hot pepper sauce
2 green onions (scallions) with stems, sliced

Cook the potatoes until tender, then dice them; cook the broccoli until tender. Keep both hot. Combine the remaining ingredients. Bring just to a boil, stirring. Pour over the vegetables and toss gently. This salad is also delicious served cold.
